LITTLE GIFTS AND 50 YEARS TOGETHER

An anniversary is a time to celebrate the joys of today, the memories of yesterday, and the hopes of tomorrow.

This month the good doctor, my David, and I celebrated 50 years of marriage!! Wow, that’s a big thing! Being married to my best friend for 50 years.   I just recently saw a quote that I loved:

Friendship isn’t a big thing, it’s a million little things. 

That goes for marriage too! This quote reminded me of something I read recently;  Brennan Manning, in his recent book The Furious Longing of God, quotes Hans Urs Von Balthasar:

Blessed are the poor in spirit…Willing and easy to direct. Like little puppies they do not take their eyes from their master’s hand to see if perhaps he may throw them a little morsel from his plate.     So carefully…follow my promptings…listen…interpret…the poor are satisfied with little gifts.

People sometimes laugh at me when I get so excited about something that to them is minor, and when they do, I have wondered if I’m being trivial in that moment.   But, NO, I’m realizing that I’m blessed to be thankful, excited or joyful about even little things.

And many more: the gift of music, getting to read a good book, an unexpected phone call from one of my kids.   And what about when something you were worried about somehow WORKS OUT!?   All of these little things that have made up these 50 years are so much better when shared with David.   Love and thanks to Dr Fern for making many of them possible!

In closing, before you get the recipe, I want to give one of my favorite quotes about marriage. It’s inevitable that stress, schedules, sickness,  bills, and LIFE will cause disagreements and disappointments, but what do you do after the disappointment? That’s where the quote comes in:

A successful marriage requires falling in love many times, always with the same person!

German Chocolate Cake

(LOVE IT! ANOTHER LITTLE THING I LOVE)

Recently a friend shared how to doctor (no pun intended!) a cake mix so it tastes homemade!   I tried it instead of making my German Chocolate Cake from scratch and it was a success!

Cake Ingredients

One German Chocolate Cake Mix

3 eggs

1/3 cup melted butter

1-1/4 cup buttermilk

Mix all together and beat on low 30 seconds.

Increase speed of mixer to medium high and beat for two minutes,

Turn into greased and floured cake pans (2 or 3, whichever you prefer).

Bake as directed on cake box.

Icing Ingredients

1 cup evaporated milk

1 cup sugar

3 egg yolks

1 stick butter (8 TBLSP)

1 tsp vanilla

1-1/4 cup coconut

1 cup chopped pecans

Combine milk, sugar and butter in heavy saucepan and cook over medium heat until thickened (about 12 minutes), stirring frequently. Meanwhile, separate eggs, putting yolks in a small bowl. Beat with a fork. When cooked mixture starts to thicken, gradually add part of the hot mixture to the egg yolks, beating all the while. Add as much as your little bowl will hold and mix. Then put back into the saucepan and cook for a minute or two. Add coconut, pecans and vanilla. Let it cool til thick enough to use in between each layer.   It’s OK if this goodness oozes out and spills over!can’t you taste it?!IMG_0987
