FUN IN THE SUN

 

imageYay!  We just returned from our annual family vacation at the beach.  And word on the street is that it was the best one ever.  I’d say that’s a success!

It’s interesting how a vacation “routine” can change through the years. Think back on your early beach days: for us that consisted of laying and baking in the sun on the beach ALL DAY (no pool was nearby). And we did not know what SPF even was. Baby oil to help us burn MORE was the way to go. After a full day in the sun, we enjoyed a cool shower before “dressing” for dinner. It seems like we went out for dinner most every night. Well, we WERE just a couple.

Now we know the sun is our enemy. So we huddle under umbrellas and if we have to venture out into the sun, we slather on 50 SPF at least. And with the introduction of condos and beach houses, most nights find folks eating in, maybe still in bathing suits even! No more of those pretty pictures snapped after everyone gets dressed for dinner. Nope, it’s different now.

But to be fair, some of the changes are certainly welcomed. Why DID it take us 40 years to realize how WONDERFUL sitting under the shade of a beach umbrella feels. WOW! Is that breeze cool or what? And not eating out, that’s pretty great too. You don’t have to come in to shower and dress when you would rather hang out longer on the beach, enjoying how super great the beach is when the crowd thins out around 5:00.

But I still miss those sweet pictures…………..

​​​​BREAKFAST COOKIES
Vacation means you get to eat whatever you want, but these are actually full of healthy ingredients.
2 cups old-fashioned oats
2-1/4 cups flour
1 cup Grape Nuts cereal
½ cup wheat germ
½ cup oat bran
2 teaspoons baking soda
2 cups (4 sticks) butter, softened
2 large eggs
1 cup brown sugar
½ cup sugar
1 tablespoon vanilla
1 cup almonds or walnuts
1 cup raisins
1 cup chopped dates

Cream butter and sugars with mixer. Add eggs and vanilla and beat till smooth. Mix together the cereals, flour and soda in a separate bowl; add to creamed mixture. Mix in nuts, raisins and dates. On parchment paper lined pans, mound ¼ cup of dough for each cookie, about 2” apart. Bake 10-15 minutes at 350, depending on how brown you like your cookies. Let cool directly on the baking sheet; they will firm up as they cool. This makes 28 large cookies that will serve as breakfast. It IS vacation!
