DOCTOR’S WIFE FLEES

Last weekend was the good doctor’s turn to take call for eight surgeons as well as ER call. So what does the good doctor’s wife do, in such a situation….? Get outta’ Dodge!

We’ve tried every idea we could come up with….and for the health of our marriage, a girl’s trip is the best idea. And what a great excuse to visit my two grandsons in Austin, Texas!! This time the two suitcases Southwest Airlines allowed me were HEAVY! I think I had too much time to anticipate the trip. One trip too many to the Target toy department and too much time on Pinterest  thinking of fun things to do with my grandsons, which required supplies like shave cream and baking soda (heavy!). I had watched again recently the movie Saving Mr Banks and maybe I was inspired by the aunt who came with the big valise full of everything wonderful.

So while my husband was working hard, saving lives, I had a marvelous time. I got to babysit and try out some of my Pinterest suggestions! And got to enjoy hugging and wrapping my grandsons in my latest towel creations!

My second grandson celebrated his 3rd birthday while I was there!  Blowing out the candles…IMG_0775

   Now a 3 year old birthday party includes the parents of all his friends…so it’s a for sure party, requiring grownup food and beverage as well as birthday cake. I’m so honored that my daughter loves for me to come and help her cook for these occasions and get to meet all her cool friends in Austin.  Give a little shout out to Austin, Texas!

All this discussion leads to the recipe this month! This is an old recipe I got years ago at a neighborhood get-together which I have doctored up a little bit!

SAUSAGE BREAKFAST/BRUNCH CASSEROLE

Brown 1 pound of hot or mild sausage in skillet. Remove from pan and drain on paper towels. Brown one red pepper sliced and one onion chopped in remaining grease in pan. Set aside Cut the crusts off 12 slices of white bread and butter on both sides. Put 6 slices in a 9×13 baking dish. Top with the sausage and peppers and onion and at least two cups of grated Monterey jack or Mexican blend cheese. Top with remaining 6 slices of buttered white bread. Beat together, 3 cups of milk, 4 eggs, 1 tsp salt and 1 tsp dry mustard. Pour over bread and sausage in pan. Refrigerate overnight. Bake at 350 for 45 min to one hour, till browned and puffed up. Enjoy! Be prepared to take some compliments!
